Lentils are among Canada’s top homegrown crops. They’re high in protein, inexpensive for consumers and easy on the environment, returning nitrogen back into the soil. The high quality and availability of Canadian-grown lentils make them sought after around the world. And they love Saskatchewan’s dry conditions. Canadian researchers are finding ways to improve how and what inputs are used to grow the best crop. With Canada’s demographics and cultures changing, there’s a new appetite in urban areas for lentils now, too.
