Craft brewers are feeling the heat from consumers to produce beer with all-local ingredients. And to the relief of Canadian craft beer drinkers, local farmers are stepping up to the plate and are expanding their acres (and varieties) of hops — the ingredient attributed to the pine-like sometimes citrus flavour of popular India pale ales. Some farmers have even started to mirror the wine industry’s terroir mentality, promoting their hops as unique due to the distinct geography, geology and climate their plants are grown in.
